Micro-Arugula, My First Mini-Harvest

Micro-arugula

As a novice gardener, having these arugula seedlings sprout within two to three days is like a big pat on the back. And just at over a week old, they sprouted so abundantly that I went through the highly advised method of “thinning”.  That is, removing some of the sprouts (usually weaker ones) to make ample space between plants so that they can grow strong.  To my delight, all of the arugula sprouts were gorgeous, and so the flavor was too!

The flavor is definitely sharp and peppery like that of grown up arugula or rocket. But it’s actually a little more intense yet in a clean, distinct way. And with the delicate texture, it’s like sprinkling peppery, arugula happiness all over that which you desire. They go brilliantly on any salad, pasta, pizza, or in a mixed sprout salad. I was happy eating them as I picked.

If flavor and ease of growing weren’t enough to convince you that YOU should grow these too, they are packed with nutritional treasures. Like most sprouts, they’re full of active enzymes, vitamins A, C, B-complex, amino acids, and iron.  You just cannot have enough sprouts!

    Wow, what beautiful microgreens!!! They remind me of pea shoots…look almost the same as your arugula…love adding baby pea shoots to wraps and salads!!!

    Callie – without a doubt you can manage micro-greens in a condo! I’ve learned that arugula is incredibly easy to grow, n the rest of these sprouts have grown up beautifully in a big pot in partial shade (new post coming soon!)
