This looks so delicious! It could come straight from a fancy restaurant. I love clementines as well. They're so cute and portable and MUCH easier to peel than an orange!

Actually no, I don't really ever use ring molds. For this ice cream (and brownie) I used this tool by Cuisinpro (http://www.cuisipro.ca/site/eng/product_detail....) that's like a giant hole punch, made specifically for ice cream :)
